Nobody has measured how much a guest eats, and any page that hands you a single confident number has quietly invented it. What does exist is guidance: extension services publish per-person figures because somebody planning a graduation open house has to start somewhere, and those figures are appetites rather than measurements. This page takes one such table — Iowa State University Extension and Outreach, through its AnswerLine service — multiplies it by your guest count, and gives you the range the source gives rather than a midpoint that would look more precise than the thing it came from. Every figure here is a rule of thumb. It is a well-travelled one, and it is still a rule of thumb.

How it is calculated

The arithmetic is a multiplication; the numbers being multiplied are the transcribed part. AnswerLine gives 6–8 oz of protein and 4–6 oz of sides per person, 4–7 bite-sized appetizers, one to two desserts, and beverages at two per guest per hour. Ounces are shown here as pounds because that is the unit the same table uses in its own column for fifty guests, and the low and high figures are carried through separately instead of being averaged away.

Questions people ask

Where do these numbers come from?
From "Graduation Party Tips", published by Iowa State University Extension and Outreach on its AnswerLine blog, which itself points at the University of Minnesota Extension's quantity-food planning guidance. The headline figure is "In general, plan for 1 to 1.5 pounds of food per guest", and the table under it breaks that into protein at 6-8 oz, sides at 4-6 oz, appetizers at 4-7 bite-sized pieces and dessert at one to two pieces per person. Those are the only food figures this page uses, and it uses them unaltered.
Why does the length of the party change only the drinks?
Because that is the only place the source counts by the hour. It gives beverages as two bottles of water and two cans of soft drink per guest per hour, and gives everything else per guest flat. A page that stretched the food figures across the clock as well would be making up a relationship the guidance does not contain. Long parties do go through more food, and the honest answer is that this table does not say how much more.
What does the snacks-only setting actually change?
It drops the protein, the sides and the pounds-of-food total, and leaves appetizers, dessert and drinks. It does not raise the appetizer figure, and that is a deliberate gap: the source counts 4-7 pieces per person at a party where a main course is also on the table, so for an evening with nothing else to eat that count is a floor, not a plan. We could not find an extension or catering guideline with a per-hour appetizer figure for a party without a meal, so the page does not print one.
How many people actually turn up?
Fewer than you invited, and the source has a working answer for the open-house case: "a common strategy is to plan for 60% of the guests invited", because guests are often visiting several parties the same afternoon. That is specific to a drop-in event rather than a sit-down dinner, so the page asks for the number you expect through the door rather than doing that discount for you.
Why a range instead of one number?
Because the source gives a range, and collapsing it to a midpoint would make the page look more certain than the thing it is quoting. Six ounces of protein per guest and eight are both inside the guidance; which end you cook to depends on whether your crowd is teenagers or grandparents, whether the meal is the point of the afternoon, and how much you mind leftovers. The range is the answer, not a failure to give one.
How long can the food sit out?
Two hours, and one if it is above 90 °F outside. The same AnswerLine post puts it plainly: perishable food must not sit in the "Danger Zone" of 40°F-140°F for more than two hours, because bacteria multiply rapidly in that range. That is a limit on how you serve the quantities on this page, not on how you calculate them — put out half and refill from the fridge rather than laying the whole table at once.
