Scaling a recipe is one division and one multiplication, and if that were the whole story nobody would need a page for it. Batches go wrong because the factor is right about the ingredients and silent about everything else. Double a cake and you have twice the batter, the same tin, and a bake that no longer finishes in the middle. Double a stew and the salt that was right for four is aggressive for eight, because seasoning follows the tongue rather than the arithmetic. This page multiplies up to six ingredient lines and marks the ones it does not trust itself on, which is the part you cannot do faster in your head.
How it is calculated
factor = servings you need ÷ servings the recipe makes · new quantity = old quantity × factor
Both sources behind this page describe the same two steps. The Institute of Child Nutrition calls the number a multiplying factor and gets it by dividing the new yield by the original yield; the BCcampus culinary text calls it a conversion factor, defines it the same way, and then multiplies every ingredient by it. Above one is a bigger batch, below one a smaller one. Everything on this page is those two lines applied to whatever you type.
Questions people ask
- What does not scale with the factor?
- Time, equipment and seasoning. On cooking time the BCcampus text is blunt: "Cooking and mixing times can be affected by recipe adjustment if the equipment used to cook or mix is different from the equipment used in the original recipe." On seasoning it is blunter still — "Spices and seasonings must be increased with caution as doubling or tripling the amount to satisfy a conversion factor can have negative consequences. If possible, it is best to under-season and then adjust just before serving." That is why this page marks salt and spice lines rather than pretending the number it printed for them is finished advice.
- Do I need a bigger tin or a longer bake?
- Where professionals can, they add pans rather than depth. The USDA standardized recipe used in the Institute of Child Nutrition lesson says "For 25 servings, use 1 pan. For 50 servings, use 2 pans." and then gives one bake — a conventional oven at 375 °F for 25 minutes — for both yields. Doubling the recipe doubled the trays and changed nothing about the oven. Pour twice as deep into one tin and you are no longer cooking the recipe that was tested, and no factor on this page can tell you the new time.
- Does baking powder scale like flour?
- In the formulations quoted here, yes. The BCcampus biscuit formula goes from 75 to 300 at a factor of four and its baking powder goes from 4 oz to 16 oz, the same multiplication as the flour. There is advice around that says to hold leavening back to about three quarters when scaling up; no source we could cite carries that figure, so this page neither applies it nor prints it as though it were settled. What the sources do support is watching the pan and the seasoning.
- Why 0.375 cups instead of a fraction?
- Because a decimal is honest about a quantity your measuring cups cannot hit and a tidy fraction is not. The lesson plan behind this page does the same division and then rounds by hand to something measurable — it turns 4.2 cups into 4¼. Take the figure here as the target and round it the same way, to whatever your smallest spoon or scale can actually show.
- Is there a point where scaling stops working?
- Yes, and it arrives sooner going up than going down. The BCcampus text warns that "substantially increasing the yield of small home cook recipes can be problematic as all the ingredients are usually given in volume measure, which can be inaccurate, and increasing the amounts dramatically magnifies this problem." A cup packed a little heavy is a rounding error at four servings and a quarter of a kilo at forty. Past a factor of about four, weigh rather than measure, and cook the batch once before you cook it for guests.
- What about the eggs?
- The page will tell you the recipe needs 1.5 eggs, because that is what the arithmetic says. Nothing in the sources covers rounding an egg, so nothing here decides it for you. In practice you either round to a whole egg and nudge the liquid, or beat one and weigh half of it, which is what a bakery would do — but that is craft, not a figure anyone can cite.
